Not to brag or anything, but I'm eating this right now.
As a fan of bitter greens, my love of dandelions is not surprising. They are the very bitterest of greens. Delicious in stews, salads and stirfries, the little weed is jampacked with iron, calcium, vitamin A and all sorts of other happy words that keep the scurvy away. That isn't why I like this, though. Oh, no, no, no. I like this because it is awesome.
This is one of those really easy one dish meals that looks and tastes like you are some sort of culinary super star, when in fact you just dragged yourself out of bed and threw some shit in a pan and glared at it until it wilted from sheer intimidation. It makes an excellent brunch, and is wonderful for impressing whoever it is you woke up with.
egg + toast with wilted dandelion greens
serves 1, easily doubled/tripled/quadrupled
1 tbsp. olive oil
2 cloves garlic, finely chopped
red pepper flakes (if you are so inclined)
handful of dandelion greens, ends trimmed and chopped
splash of water
1 slice bread (I used plain ol' sprouted grain, something crustier would be wonderful)
- heat oil in skillet over medium heat, then sautee garlic and red pepper (if using) until fragrant, then toss in dandelion greens. when wilted, add a splash of water and cover until the greens are tender, about 3 minutes. mine cooked quickly, so keep an eye on it.
- toast yer bread. pile them tasty greens on there.
- fry your egg. I like mine a little goopy. pile that on them greens.
- put inside of you.
